My family loves to make chocolate marshmallow cookies. They have been a family favorite for a LONG time, started by my Nan. I remember coming home after school finding the beautiful cookies waiting for me. Yum! Well, I found a totally simple and fantastically yummy way to make them . . .

All it takes is a brownie mix, a few extra ingredients and some of the BIG marshmallows. You split the marshmallows in half, because they are huge and awesome!
RECIPE:
1 Ghirardelli brownie mix
2 eggs
1/3 cup oil
3 tablespoons flour (1/3 cup for high altitude)
Bag of Giant Marshmallows
Mix flour into brownie mix. Lightly beat eggs with oil and mix in. The dough should be stiff like cookie dough. One recipe will make 24-30 cookies, depending on the size. Bake at 350° for 10-11 minutes, depending on the size of the cookies, less if the cookies are 2" or smaller.
*With marshmallows: Take out at 9 minutes, place half of marshmallow on top of cookie, bake for 1-2 more minutes, until the marshmallow has melted. Let them cool.
You can also add chocolate frosting to make them ultra-amazing.
Maybe next time.
Enjoy!
Love, Mari
